Makes 2 cups dip
Prep Time: 5 minutes Cook Time: 25 minutes Total Time: 30 minutes
2.5lbs sweet onions (4 medium onions)
2T salted butter
2T olive oil
2T Whiskey Maple Smoke Rub
12oz sour cream
8oz cream cheese
Rough chop onions. Heat butter and olive oil in large saute pan over medium heat. Add onions and saute for 10 minutes. Stir in Whiskey Maple Smoke Rub and whiskey, saute for 2 minutes. Reduce heat to medium low, cover and let simmer for 15 minutes stirring halfway through.
Let cool, then pour into food processor. Add sour cream and cream cheese. Blend on high for 1 minute to a creamy consistency. Serve warm or chilled. Tastes great with soft pretzel bites, pretzel crackers or rye chips.
